Diversification of Chicken Meat-Based Products Through Training on Chicken Floss Production with Banana Blossom Fiber Addition for Strengthening Food Security in Cintaratu Village, Pangandaran Regency
Abstract
Food security in communities can be strengthened through the utilization of local food resources into innovative products with nutritional and economic value. This community service activity aimed to improve the knowledge and skills of PKK members in Cintaratu Village regarding the processing of chicken floss with added banana blossom fiber. The activity was conducted on July 16, 2026, at Universitas Padjadjaran Pangandaran Campus, Cintaratu Village, Pangandaran Regency, involving 39 participants from five hamlets. The methods included initial surveys and discussions, educational sessions, flyer distribution, product-making demonstrations, and evaluation through pre-test and post-test assessments. Data were analyzed descriptively and quantitatively to determine changes in participants’ knowledge. The evaluation results showed increased knowledge regarding chicken floss processing (71.48%), the utilization of banana blossom as an additional ingredient (104.05%), local food diversification based on banana blossom (78.26%), and the purpose of floss processing related to shelf life, nutritional value, and product market value (48.17%). Participants responded positively and considered the product potential as a supplementary food for integrated health posts (PMT Posyandu) and a household business opportunity. This activity contributed to improving local food utilization and supporting food security in Cintaratu Village. Further assistance in product development, packaging improvement, and marketing strategies is needed to ensure sustainable development as a community-based product.
